Thai seafood curry

Ingredients

  • 1
    pouch readymade Thai green curry sauce
  • 400
    g
    yellowtail fillets, cubed (or other firm fish)
  • 200
    g
    prawns, cleaned and peeled
  • 6
    spring onions, thickly cut
  • 50
    ml
    fresh coriander, roughly chopped
  • cooked basmati rice, to serve
 

Method

15 minutes
 
1. Empty the curry sauce into a saucepan and heat gently for five minutes. 2. Add the fish and prawns and continue to simmer gently for 10 minutes. Stir occasionally, but be careful not to break up the fish cubes. 3. Just before serving, stir in the spring onions and coriander. Serve with basmati rice.
