Thai noodle salad

    instant noodles
  • 2
    deboned chicken breasts, sliced into thin strips
  • salt
  • a little olive oil for frying
  • 200
    large frozen prawns, defrosted to room temperature
  • 1
    red pepper, seeded and cut into strips
  • 1
    mango, peeled and sliced


Cook the noodles according to the packet instructions. Plunge into ice-cold water to cool rapidly, then drain and pat dry.
Whisk all the ingredients for the salad dressing together and stir into the noodles. Season the chicken breasts with salt and stir-fry in olive oil until golden brown and just done.
Add the prawns and stir-fry until they turn bright pink and are firm to the touch.
Add to the noodle mixture along with the rest of the salad ingredients. Mix lightly and finish with lemon wedges if desired.
