Thai lamb with chilli and mint

    g
    deboned lamb, sliced into strips
  • 60
    ml
    peanut or vegetable oil
  • 1
    garlic clove, finely chopped
  • 40
    ml
    oyster sauce
  • 20
    ml
    fish sauce
  • 5
    ml
    sugar
  • 1
    red chilli, seeded and sliced into thin strips
  • 125
    ml
    shredded freshmint
 

Method

In a wok or large pan heat the oil over high heat. Stir-fry the meat for 2 minutes or until nearly browned. Add the garlic, oyster and fish sauce, sugar and chilli and stir-fry for 2 minutes more or until the meat is done. Stir in the mint and serve immediately with white rice.
