Tasty three-bean salad

    rashers bacon, diced
  • 1
    onion, finely chopped
  • 1
    green pepper, seeded and diced
  • 2
    cloves garlic, crushed
  • 10

    Fresh ginger, grated
  • oil for frying
  • 10

    mild curry powder
  • 410
    g
    whole tomatoes, finely chopped
  • salt and black pepper to taste
  • 10
    ml
    sugar
  • 1
    bay leaf
  • 410

    baked beans in tomato sauce
  • 410
    g
    butter beans in tomato sauce
  • 410
    g
    white or kidney beans, drained
 

Method

 
Fry the bacon until crisp. Remove from the pan. Sauté the onion, green pepper, garlic and ginger in a little oil until tender. Add the curry powder and stir-fry for about another minute. Add the tomatoes and seasonings. Reduce heat and simmer until a thick sauce is formed. Add the remaining ingredients and simmer for another 5 minutes. Serve hot or cold. The salad will keep in the fridge for about one week. Serves 4-6.
