Tasty artichoke and bean dip

Ingredients

    g
    can artichokes, drained
  • 410
    g
    can butter beans, drained
  • 3
    garlic cloves, crushed
  • 45
    ml
    lemon juice
  • 30
    ml
    cold-pressed olive oil
  • 2
    ml
    ground cumin
  • 5
    ml
    chilli flakes
  • salt and freshly ground black pepper
 

Method

 
Blend together all the ingredients, except the seasoning, until you have quite a coarse pâté.
Stir in a little more lemon juice and oil or water if the mixture is too stiff and dry.
Season to taste and serve with toast and lemon wedges, or, better still, a big bowl of grated carrot and beetroot, chopped radishes, baby corn and cauliflower florets.

Tips
Chickpeas and beans work equally well If you prefer, pop the pâté in the oven for 15 minutes and serve it warm.
