    oil
  • 2
    onions, finely chopped
  • 3
    garlic cloves, finely chopped
  • 445
    g
    fruit chutney, hot or mild
  • 100
    ml
    orange juice
  • 60
    ml
    sherry
  • 25
    ml
    soy sauce
  • 15
    ml
    orange rind, grated
 

Method

 
Heat the oil in a pan and sauté the onions and garlic until soft. Add the remaining ingredients and mix well. Marinate mutton, chicken or kebabs in the sauce for 24 hours and use to baste the meat while braaiing. Makes about 500 ml sauce.
