Method

 
SAUCE: Chop onions, carrots and celery very finely. Fry slowly in 50 g butter, add white wine and cook until vegetables are tender and wine evaporated. Add meat (made up of one third each beef, pork and veal) and cook for 3 to 5 minutes. Pour in tomatoes and milk, and simmer for about 40 minutes. Adjust seasoning. PASTA: Bring water and salt to a rapid boil, cook noodles to manufacturer's instructions, until al dente. Drain. Place half the sauce, the Parmesan cheese and remaining butter in serving dish. Pour hot noodles on top, add remaining sauce and toss well. Serve immediately. TOTAL KILOJOULE COUNT: 16 985 kJ (4 060 Cal). A portion: 4 245 kJ (1 015 Cal).
