    oil

    cake flour

    baking powder

    Cheddar cheese, grated
  • 300

    corned beef, mashed
  • 1
    small onion, finely chopped
  • pinch cayenne pepper
 

Method

 
Preheat the oven to 200 ºC (400 ºF). Grease a 12-hollow muffin tin. Hard-boil 2 of the eggs, then shell and mash them. Beat together 1 of the remaining eggs, the milk and oil until just blended. Sift the cake flour, baking powder and salt together. Add the egg and milk mixture and stir until just blended. Spoon into the prepared tin. Lightly beat the 2 remaining eggs and add the hard-boiled egg, Cheddar cheese, corned beef, onion and cayenne pepper. Drop spoonfuls of the mixture on to the muffins in the tin and bake for 15-20 minutes or until the muffins are done. Serve hot. Makes 12 muffins.
