Syrupy sweet potatoes

    sweet potatoes
  • 100
    g
    butter
  • 250
    ml
    water
  • 90
    g
    brown sugar
  • 30
    ml
    dry sherry
  • 125
    ml
    maple syrup
  • 1
    orange, grated rind and juice
  • 2
    sticks cinnamon
  • 3
    ml
    salt
 

Method

 
1. Peel and slice potatoes, place in a pot of boiling water and cook until just tender. 2. Heat remaining ingredients in a heavy-based pan until dissolved, bring to the boil for 1 minute. 3. Arrange potatoes in an ovenproof dish and pour syrup over, sprinkle with brown sugar and cinnamon and bake for 10 minutes or until top is brown.
