Sweetcorn and bacon burgers

  • 250
    g
    bacon, cut into pieces
  • 2
    large onions, finely chopped
  • 410
    g
    sweetcorn
  • 65
    ml
    mayonnaise
  • salt and freshly ground black pepper
  • 12
    hamburger rolls, halved but not sliced all the way through
  • 250
    ml
    grated Cheddar cheese
 

Method

 
Heat a pan and fry the bacon and onions until cooked and tender. Remove from the heat and cool slightly. Mix the bacon and onions with the sweetcorn and mayonnaise and season to taste. Divide the mixture between the 12 rolls, spooning it on the bottom half of the rolls only. Sprinkle with cheese and grill under a heated oven grill until hot and the cheese has melted. Close the rolls and serve hot. Makes 12 burgers.
