Sweetcorn Salad

    sweetcorn cobs, cooked
  • 3
    tomatoes, finely diced
  • 2
    avocado, diced
  • 1
    carrot, finely chopped
  • juice of 1 lemon
  • 3
    tablespoons olive oil


Cut the sweetcorn kernels off the cob and in a bowl, add all the vegetables together. Drizzle the olive oil and lemon juice over the vegetables and toss lightly.
