Sweet potatoes baked in orange juice and cinnamon

3.00 sweet potatoes — medium
15.00 ml butter
45.00 ml brown sugar — soft
2.00 ml oranges — zest only
1.00 orange juice
2.00 ml nutmeg — whole, freshly grated
2.00 cinnamon — stick

Method:

Slice peeled sweet potatoes into rounds. Place in a saucepan with enough boiling water to just cover. Simmer until tender, about 30 minutes. Remove from stove and drain off water. Place sweet potato slices in an ovenproof dish. Dot with butter, and add sugar, grated orange peel and juice. Sprinkle with nutmeg and add cinnamon sticks. Bake at 200 ºC for 12 to 15 minutes.
