Sweet potato & walnut pie

    sweet potatoes
  • 75
    ml
    butter
  • 397

    Nestlé condensed milk
  • 5

    ground cinnamon
  • 2

    ground nutmeg
  • 10
    ml
    grated orange rind
  • 2
    large eggs, lightly beaten
  • 1
    quantity shortcrust pastry (see recipe)

    syrup

    brown sugar

    chopped walnuts
 

Method

45 minutes
 
1 Boil sweet potatoes in their skins until tender. Peel and mash until smooth. Add 60 ml butter and beat until smooth with an electric beater. Stir in the condensed milk, spices, orange rind and half the egg mixture. 2 Roll out pastry and line a greased pie dish. Crimp edges with your fingertips and use extra pastry to make leaf or plate decorations around the edge of the dish. 3 Spoon filling into shell and bake in a preheated oven at 220ºC for 20 minutes. 4 Mix together remaining egg, syrup, sugar, 15 ml melted butter and the walnuts. Remove pie from the oven after 20 minutes and sprinkle with topping. 5 Reduce heat to 180ºC and bake for a further 20 minutes. Serves: 8 Preparation time: 20 minutes Baking time: 45 minutes Oven temperature: 220ºC
