Sweet 'n sour pork

    spaghetti, uncooked
  • 500
    g
    pork fillet, sliced
  • salt and pepper
  • oil
  • 1
    clove garlic, crushed
  • 10
    ml
    fresh ginger, grated
  • 4
    chives, chopped OR 1 onion, sliced
  • 1
    red pepper, seeded and diced
  • 125
    g
    mangetout (optional)
  • 15
    ml
    cornflour
  • 30
    ml
    soy sauce
  • 30
    ml
    sherry
  • 15
    ml
    grape vinegar
  • 50
    ml
    water
 

Method

+/- 30 min
 
Cook the spaghetti in rapidly boiling water till just soft. Drain and set aside, keeping it warm. Season the pork with salt and pepper and fry in heated oil till brown on the outside. Remove from the pan and set aside. Sauté the garlic, ginger, chives and red pepper in a little oil till soft. Add the mangetout and stir-fry for about 1 minute. Add the cornflour and the remaining ingredients. Simmer till the sauce thickens and return the pork to the pan. Heat till warmed through and serve immediately with the spaghetti. Serves 3-4.
