Sweet couscous with dates and nuts

Method

Preheat the oven to 180 ºC. Place the couscous in a large bowl. In a medium casserole dish, dissolve the sugar in the water and add the star anise, cinnamon, lemon juice, orange rind and butter. Heat over a low heat until the butter and sugar have melted and dissolved. Bring to the boil and simmer for 1 minute. Remove the star anise and cinnamon stick. Pour the syrup over the couscous and leave to stand for 10 minutes. Separate with a fork. Add the nuts and the dates (soaked in 125 ml (1/2 cup) boiling water) and mix well. Spoon the mixture into a large, ovenproof dish and bake for about 30 minutes. Serve with thin custard or warm milk and cinnamon sugar.
