Sweet chilli and soy chicken

    ml
    less-salt soy sauce
  • 65
    ml
    sweet chilli sauce
  • 5
    ml
    fresh ginger, grated
  • 2
    cloves garlic, chopped or crushed
  • 22
    ml
    olive oil
  • 4
    chicken breast fillets, cubed
  • 2
    packets 99 percent fat-free 2-minute noodles
  • 2
    yellow peppers, seeded and sliced
  • 1
    handful coriander leaves, chopped
 

Method

 
Mix soy and chilli sauces together.
Add ginger, garlic and 5 ml olive oil and marinate chicken cubes in sauce for at least 30 minutes.
Cook noodles.
Heat remaining oil in a wok or non-stick pan and stir-fry yellow peppers for 3 minutes, add chicken and sauce and cook over high heat for about 5 minutes.
Pile noodles into heated bowls, top with chicken mixture and scatter with chopped coriander.
