Sweet and sour beetroot

    medium beetroots
  • 1
    onion, sliced into rings
  • 20
    ml
    mild chutney
  • 80
    ml
    sugar
  • 10
    ml
    cornflour
  • 80
    ml
    vinegar
  • 65
    ml
    water
  • pinch of salt
 

Method

 
Wash beetroot well and cook for 30 to 60 minutes, or until tender.
Put cooked beetroot in cold water for a few minutes before removing the skins. Slice beetroot into rings and add onion rings.
Mix together chutney, sugar, cornflour, vinegar, water and salt. Boil until sauce thickens.
Pour sauce over beetroot and onion, and allow to cool before serving.
