Sushi rice

Ingredients

  • 250
    ml
    sushi rice
  • 3
    ml
    salt
  • 375
    ml
    water
  • 25
    ml
    sugar
  • 30
    ml
    rice vinegar
 

Method

15 minutes
 
Soak rice in cold water for 15 minutes, drain, leave in a colander for 20 minutes.
Transfer rice to a saucepan and add the salt and water and bring to the boil.
Reduce heat and cover with a tight-fitting lid.
Simmer for about 15 minutes until all the water has been absorbed.
Remove from the stove and remove the lid.
Cover with a cloth and replace the lid. Leave to stand for 15 minutes.
Meanwhile, dissolve the sugar in the vinegar in a small saucepan over a low heat. Stir constantly.
Remove from the heat and allow to cool.
Spoon rice into a shallow bowl.
Add vinegar mixture slowly, using a spatula to 'slice' through the rice to separate the grains.
Cover with a dish towel and use within 12 hours. Do not refrigerate.
