Summer fruit parcels

    strawberries

    firm, ripe nectarines

    apricots

    plums

    brandy or rum
  • 2
    oranges, juice
  • 2
    ml
    ground cinnamon

    ml
    brown sugar
  • flaked almonds
 

Method

 
Preheat oven to 200 ºC. Peel and slice bananas. Wash and hull strawberries, Halve and stone nectarines and cut into wedges. Halve and stone apricots and plums. Divide fruit equally between 4 pieces of heavy foil. Mix brandy, orange juice, cinnamon and sugar and drizzle over fruit. Crumple foil to seal parcels, leaving enough room for air to circulate. Bake for 10 to 15 minutes or until fruit has softened. Open parcels, sprinkle with almonds and a little icing sugar and serve with ice cream or yoghurt. TOTAL KILOJOULE COUNT: 2 930 kJ (700 Cal). A portion: 735 kJ (175 Cal).
