Chicken salad with dried apricots

    large pasta shapes

    mild curry powder (or to taste)

    ml
    mayonnaise
  • 40
    ml
    chutney
  • 125
    ml
    Bulgarian yoghurt or sour cream

    lemon juice
  • 4
    smoked chicken breasts, diced
  • 125
    ml
    pecans, chopped
  • 100
    g
    soft dried apricots, chopped
  • 50
    ml
    currants
  • handful chopped parsley
 

Method

Cook the pasta in salt water until al dente, and drain.

Whisk the curry powder, mayonnaise, chutney, yoghurt or sour cream, and lemon juice together and season with salt and pepper. Stir the mixture through the pasta.

Add the chicken cubes, nuts, apricots and currants to the pasta, followed by the parsley.
