Stuffed pork chops

Ingredients

  • Cheese Stuffing:
  • 250
    ml
    fresh white breadcrumbs
  • 125
    ml
    grated cheese such as mozzarella, Parmesan or blue cheese
  • mayonnaise
  • 5
    ml
    coriander or sun-dried tomato pesto (optional)
  • Chops:
  • 4 to 6 pork chops, thickly cut
  • 60
    ml
    olive oil
  • 30
    ml
    lemon juice
  • 15
    ml
    Dijon mustard

Stuffing:
Mix the breadcrumbs and cheese. Add enough mayonnaise to make a thick paste. Add the coriander or tomato pesto (if using).
Chops:
Make a horizontal incision in each pork chop to make a pocket, taking care not to cut all the way through. Fill the pockets with the stuffing and secure with cocktail sticks. Blend the olive oil, lemon juice and Dijon mustard and set aside. Braai the chops over medium coals until done (about 14 minutes), basting with the oil mixture from time to time. Serve with carrot sticks and chickpeas.
