Stuffed chicken breasts

    g
    spinach, washed and trimmed
  • 100
    ml
    crumbled feta cheese
  • 15
    ml
    finely chopped dill
  • 2
    ml
    lemon pepper
  • 5
    ml
    finely chopped oregano
  • 1
    egg, whisked
  • 8
    chicken breasts
  • salt to taste
  • 25
    ml
    butter
  • 1
    garlic clove, finely chopped
  • 20
    ml
    finely chopped parsley
 

Method

 
Preheat the oven to 180 °C.
Heat the spinach in its own liquid until the leaves are wilted. Drain and squeeze out any excess liquid.
Chop the spinach and mix with the feta cheese, dill, lemon pepper, oregano and egg.
Make slits in the chicken breasts, fill them with the stuffing and season with salt.
Arrange the chicken breasts in an ovenproof dish and dot with the butter. Scatter the garlic and parsley on top.
Cover androast for 30 minutes or until just done. Serve with Savoury roast potatoes and Stewed green beans.
