Strawberry yoghurt cake

    margarine

    large eggs, beaten

    cake flour

    salt
  • 15
    ml
    baking powder
  • 1
    orange, rind and juice
  • 175
    ml
    strawberry yoghurt
  • fresh strawberries, to decorate
  • ICING
  • 450
    g
    icing sugar
  • 150
    g
    margarine
  • 75
    ml
    orange juice
 

Method

35 minutes
 
Cream the sugar and margarine until light. Add the eggs, one at a time. Fold in the sifted flour, salt, baking powder, orange juice and rind, then fold in the yoghurt. Pour into two greased and lined 20 cm cake tins and bake in preheated 180 °C oven for 35 minutes or until cooked through. Remove from the oven and allow to cool for a few minutes before removing from the tins. Beat the icing sugar and margarine together. Add the orange juice and beat until smooth. Sandwich the cooled cakes together with half of the icing. Spread the remaining icing around the sides and on the top of the cake. Decorate with fresh strawberries. Makes 1 x 20 cm cake.
