    roll frozen puff pastry

    egg yolk
  • 15
    ml
    water
  • FILLING

    cream
  • 30
    ml
    castor sugar
  • 2
    ml
    vanilla essence
  • 250
    g
    fresh strawberries hulled and halved
  • 50
    g
    almond flakes slightly toasted
 

Method

 
Preheat the oven to 200 ºC (400ºF). Defrost the pastry and roll it out on a lightly floured surface to form a 28 x 32 cm rectangle. Tidy the edges and divide the pastry into 8 equal slices. Place the pastry slices on a baking sheet and prick with a fork. Add 15 ml water to the egg yolk and beat. Brush the pastry with the diluted egg yolk. Bake for 10-15 minutes or until the pastry is golden brown and has risen. Cool. Pour the cream into a mixing bowl and add the castor sugar and vanilla essence. Whip until stiff and spoon onto the puff pastry slices. Decorate with strawberry halves and sprinkle with almonds. Serve immediately. Makes 8 slices.
