Strawberry and berry pavlova

    egg whites
  • 2
    ml
    cream of tartar
  • 240
    g
    castor sugar
  • 15
    ml
    cornflour
  • 2
    ml
    vanilla essence
  • FILLING

    ml
    cream, whipped
  • 1
    punnet blueberries
  • 500
    g
    fresh strawberries, washed and sliced
  • A few sprigs of fresh mint
 

Method

Preheat oven to 110 ºC.
Whisk egg whites until just foamy. Add the cream of tartar.
Whisk until the egg white forms stiff peaks when the beater is lifted.
Add the sugar a little at a time, beating until stiff peaks form between each addition.
Fold in the cornflour with the last addition of sugar.
Fold in the vanilla essence and spoon into a piping bag. Pipe a large circular base.
Bake in preheated oven for about 1 1/2 hours.
Switch off oven and leave the pavlova to dry in the oven while it cools.
When completely cool, fill pavlova with the whipped cream.
Arrange the fruit and mint leaves on top.
Serve immediately. Serves: 8-10
