Stir-fried rice with prawns

    oil

    grated fresh ginger and garlic

    bunches spring onions, chopped

    prawns (or a packet of frozen raw prawns, defrosted)
  • 190
    ml
    frozen peas
  • 1
    Litres
    cold, cooked white rice
  • SEASONING
  • 1
    chicken stock cube, crumbled and dissolved in boiling water
  • 300
    ml
    boiling water
  • 30
    ml
    white grape vinegar
  • 15
    ml
    soy sauce
  • 5
    ml
    sesame oil (optional)
  • salt and coarsely ground black pepper
 

Method

 
Heat the oil in a large pan and add the ginger and garlic and spring onion. Stir-fry until fragrant. Add the prawns and stir-fry rapidly until pink and cooked. Set a few aside for garnishing. Otherwise, drain a can of prawns and add to the pan with the peas, stir-frying until hot. Add the rice, mix thoroughly and stir-fry until hot. Pour seasoning over. Mix through and heat. Serve garnished with whole prawns if desired. Serve immediately. Serves 4.
