Stir-fried pork with ribbon noodles

    ribbon noodles, cooked according to the instructions on the packet
  • 600

    pork strips
  • salt and freshly ground black pepper to taste

    oil
  • 3
    cloves garlic, gushed
  • 1
    bunch spring onions, chopped
  • 3
    medium sized carrots, cut into strips
  • 125
    ml
    green beans, topped and tailed
  • 125
    ml
    fresh brown mushrooms, sliced
  • 2
    yellow patty pans, sliced (optional)
  • YOGHURT SAUCE
  • 15
    ml
    olive oil
  • 125
    ml
    plain yoghurt
  • 15
    ml
    green pesto or mixed chopped herbs
 

Method

 
Drain the cooked ribbon noodles, drizzle with a little oil and mix. Season the pork strips with salt and freshly ground black pepper. Heat the oil and stir-fry the pork strips and garlic until the meat just begins to brown. Add the vegetables and stir-fry until the vegetables are cooked but still crunchy. Add a little boiling water to prevent them from sticking to the pan. Add the ribbon noodles and mix until heated through. Blend all the ingredients for the yoghurt sauce and stir into the noodle mixture. Remove from the stove plate and serve immediately. Serves 4.
