Stir-fried garlic, caper and basil pasta

    cloves garlic, sliced

    capers

    pine kernels or cashew nuts

    lemon juice
  • 150

    mozzarella cheese, sliced
  • 45
    ml
    Italian parsley
  • 500
    g
    pasta shells, cooked al dente
  • milled black pepper
  • deep fried basil leaves to garnish (see tips)
 

Method

 
Place olive oil in a frying pan over moderate heat. Add garlic, capers and pine kernels or nuts and fry until golden. Add lemon juice, cheese and parsley. Toss with hot pasta. Sprinkle black pepper over, then garnish with deep fried basil leaves and serve.
