Stir-fried beef with oyster flavoured sauce

    boneless lean beef
  • 3
    spring onions

    ml
    soy sauce
  • 45
    ml
    water
  • 25
    ml
    cornflour
  • 25
    ml
    dry sherry
  • 10
    ml
    salt
  • 45
    ml
    sunflower oil
  • 45
    ml
    oyster flavoured sauce (available at supermarkets)
  • 7
    ml
    sugar
 

Method

 
1. Cut the meat into strips 0,5 cm wide and 3 cm long. 2. Combine spring onions, soy sauce, water, cornflour, sherry and salt with the beef, mixing to coat well. Allow to marinate for 15 minutes. 3. Place a heavy-based frying pan over a high heat and add half the oil. When the oil is hot enough to ripple when pan is tilted from side to side, add half the meat mixture and stir-fry until browned. 4. Remove meat from pan. Repeat using the remaining oil and the other half of the meat mixture. Return all the cooked meat to the frying pan, and stir-fry for 1 minute. 5. Serve on a heated platter with vegetable stir-fry and basmati rice. Serves 6.
