Stir-fried baby marrows

Ingredients (9)

250 ml oil
400 g courgettes — baby, sliced
10 ml coriander — seeds, crushed
5 ml freshly ground black pepper — crushed
10 ml semolina
10 ml rice flour
7 ml salt
3 ml lemon — zest only
3 ml lemon juice

Method:

Slice baby marrows into thin slices and add the crushed coriander seeds, black pepper, semolina, rice flour and salt. Coat the baby marrows thoroughly.

Heat oil in a shallow pan and add the baby marrows. Stir fry on high heat for a few minutes and then lower the heat and allow the marrows to cook through until tender.

Add more salt if necessary and add the lemon juice and lemon zest.
   
This dish can be served
-as the vegetable dish with a lentil curry
-as a side vegetable with any meat
-as a salad with some mixed greens and crusty bread
