Sticky orange ribs

    kg
    pork spare ribs
  • 200
    ml
    tomato sauce
  • 100
    ml
    Worcestershire sauce
  • 2
    oranges, grated rind and juice
  • 150
    ml
    brandy
  • 150
    ml
    honey
  • 10
    ml
    cumin seeds
  • freshly ground black pepper
 

Method

 
Place the ribs in a shallow dish. Mix the remaining ingredients together, pour over the ribs and toss to coat. Cover and marinate overnight. Uncover and place in a microwaveproof dish. Microwave on HIGH for 6 minutes. Re-arrange and cook on MEDIUM for 10 minutes, then on HIGH for 8 to 10 minutes, until the sauce has reduced and the ribs are glazed. Stir 3 to 4 times while cooking. Place under a hot grill for 5 minutes before serving. Serve with mashed potato.
