Method

Preheat the oven to 190 ºC (375 ºF).

Sauté the onion in the heated oil until soft.
Transfer to baked pastry shell.
Pat the spinach dry and season to taste with nutmeg, salt and lemon rind.
Place in the baked pastry shell.
Blend the yoghurt, eggs and cake flour together and pour over the spinach. Stir for a moment. Bake for about 30 minutes or until the filling is cooked and set. Makes 12 slices.
