Spinach pesto

Ingredients

  • 3
    handful
    spinach leaves, washed, stemmed and shredded
  • 1
    handful
    fresh basil leaves
  • 2
    cloves
    garlic
  • 50
    g
    roasted cashew nuts
  • 75
    ml
    olive oil
  • 125
    ml
    Parmesan cheese, grated
 

Method

 

Blend the spinach, basil, garlic and cashew nuts in a food processor until well combined.

Add the olive oil and Parmesan cheese and blend at a low speed.

Season to taste with salt and freshly ground black pepper and serve with crispy bread.
