Spinach and bacon quiche

    large onion, finely chopped
  • 125

    rindless streaky bacon chopped
  • 250
    ml
    cooked spinach, drained and finely chopped
  • 2
    large eggs
  • 250
    ml
    milk
  • 125
    ml
    cream
  • 30
    ml
    cake flour
  • 125
    ml
    grated Cheddar cheese
  • 5
    ml
    ground paprika
 

Method

40 minutes
 
1. BASE: Pour melted butter into a 22 cm pie dish. Add flour, salt and cheese and mix ingredients together. Use your finger tips to press the dough to line the dish. Pick all over, using a fork. Bake in preheated 180 ºC oven for 10 minutes. 2. FILLING: Heat butter and fry onions until soft. Remove from the pan and set aside. Add bacon to the pan and fry until crisp. Drain off excess fat, then add spinach and mix well. Remove from the heat. 3. Mix eggs, milk, cream and flour together. Season with salt and freshly ground black pepper. Add the spinach mixture and stir well. Pour into pie crust. Sprinkle with cheese and paprika and bake in preheated 180 ºC oven for 30 minutes until golden. Serve hot or cold.
