Sweet potato wedges

    olive oil
  • 2
    large sweet potatoes, cut into wedges, skin on
  • salt and black pepper
  • 7
    ml
    smoked paprika
  • 7
    ml
    chili flakes
  • FOR THE SAUCE:
  • 2
    Tbs
    butter
  • 2
    cup
    button mushrooms, finely chopped
  • 1
    cup
    full cream Greek yogurt
  • salt and pepper
  • micro greens to garnish

Preheat the oven to 190 ° C.

Arrange the sweet potato wedges in an oven tray; drizzle with olive oil and season with spices.

Grill/bake for 30 - 40 minutes until soft and golden, checking every now and then.

Meanwhile, heat the butter in a saucepan and saute the mushrooms until soft, add the yogurt, remove from heat and season with your choice of spices.

Serve the Spicy sweet potato wedges with creamy mushroom sauce, or as a side to roasts and casseroles.
