Spicy sausage and bean stew

    chorizo sausages
  • 820

    butter beans
  • 400
    g
    Italian tomatoes, chopped
  • 10
    ml
    chilli paste
  • 70
    g
    tomato paste
  • 30
    ml
    wholegrain mustard
  • 5
    ml
    English mustard
  • Italian flat-leafed parsley
  • sprigs to garnish
 

Method

 
Cube sausages. Drain and rinse beans. Chop tomatoes. Mix beans and tomatoes with remaining ingredients, except parsley. Spoon mixture into an ovenproof dish, stir in sausages and cover with foil. Bake at 200 ºC for 30 to 40 minutes, until heated through. Garnish with parsley and serve with polenta or rice.
