Spicy meatball and fruity rice

    small onion - finely chopped
  • 2
    cloves garlic - finely crushed
  • 500

    lamb or beef mince
  • 5
    ml
    ground cinnamon
  • 7.5
    ml
    ground coriander
  • 7.5
    ground cumin
  • 10
    ml
    paprika
  • 50
    g
    Montagu ground almonds
  • 60
    ml
    freshly chopped mint
  • 1
    extra large egg
  • Juice of half a lemon
  • Salt and pepper to taste
  • Fruity rice:
  • 30
    ml
    oil
  • 30
    ml
    butter
  • 2
    spring onions - chopped
  • 3
    stalks celery - chopped
  • 100
    g
    Montagu dates - chopped
  • 60
    g
    Montagu almonds - chopped
  • 3 x 250
    ml
    cooked basmati rice
  • 60
    ml
    freshly chopped coriander
 

Method

Place all the above ingredients in a bowl and mix until well combined. 

Roll into small meatballs.  Push 3 onto a skewer. 

Fry in a pan over medium heat until golden and cooked through.

For the rice:


Heat the oil and butter and fry the spring onions and celery briefly. 

Add dates, almonds, rice and coriander. 

Heat through. 

Serve with the meatball kebabs.
