Spicy fruit salad

  • SYRUP
  • 225

    sugar
  • 1
    vanilla bean
  • 5
    star anise
  • 12
    coriander seeds
  • 3
    ml
    black peppercorns
  • 3
    whole doves
  • 3
    ml
    Chinese spice powder
  • 25
    g
    ginger, peeled and julienned
  • 2
    limes or lemons, rind finely grated and juice
  • SALAD
  • 12
    litchis, shelled
  • 1
    mango, sliced
  • 1
    papino, sliced
  • half a pineapple, cubed
  • 4
    kumquats, fresh or preserved, sliced
  • 1
    small melon, diced or balled
  • 8
    granadillas, flesh and pips
  • 80
    g
    blueberries
  • 2
    kiwi fruit, peeled and sliced
  • 3
    plums; stoned and sliced
 

Method

 
1. SYRUP: Bring the sugar, 300 ml water and other syrup ingredients to the boil slowly so that the sugar dissolves. Set aside to cool and infuse. The syrup can be strained after infusing, but the spices add an exotic look the salad. 2. SALAD: Put all the fruit except the berries, kiwis and plums in a bowl. Pour over the syrup. Chill for two to three hours and add the remaining fruit just before serving.
