Spicy fried prawns

    turmeric powder
  • 5
    ml
    chilli powder
  • 5
    ml
    Salt
  • 60
    ml
    vinegar
  • 600
    g
    large raw prawns, shelled
  • 75
    ml
    sunflower oil
  • 2
    cloves
    garlic, sliced
  • 4
    small green and red chillies, deseeded and sliced
  • 10
    leaves
    curry leaves
 

Method

1. Mix the turmeric, chilli powder and salt with the vinegar. Rub mixture over prawns and marinate for 10 minutes.
2. Heat oil in a large, heavy-based frying pan. Add garlic, red chillies and curry leaves. Reduce heat and stir-fry for a minute.
3. Add prawns and stir-fry continuously, until completely cooked. Remove curry leaves. Serve warm over couscous or with spicy potato straws.
