Spicy chicken skewers

    chicken thigh fillets
  • 5
    ml
    chilli powder
  • 5
    ml
    turmeric
  • 5
    ml
    ground cumin
  • 5
    ml
    ground coriander
  • 410
    g
    baby corn
  • 1
    green pepper
  • 20
    cherry tomatoes
 

Method

 
Pre-heat oven to 200 ºC.
Soak about 20 small wooden skewers in cold water for about 30 minutes, to prevent them burning during cooking.
Trim chicken fillets of excess fat and sinew.
Cut each thigh fillet into thin strips and weave onto small skewers.
Season with chilli powder, turmeric, cumin and ground coriander.
Skewer green pepper, corn and cherry tomato. Place on a hot, lightly oiled barbecue grill or flat plate.
Cook 8-10 minutes, or until chicken is tender and browned.
