    cake flour
  • 30
    ml
    paprika
  • 20
    ml
    cayenne pepper
  • 25
    ml
    salt
  • 10
    ml
    thyme
  • 250
    ml
    milk
  • 3
    extra-large eggs
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Clean the chicken pieces. Combine the cake flour, paprika, cayenne pepper, salt and thyme in a flat dish. Blend the milk and eggs in a mixing bowl and beat well. Roll each chicken piece in the cake flour mixture and then in the milk mixture. Roll in the cake flour mixture once more and arrange the chicken pieces in a large ovenproof dish. Cover with aluminium foil and bake for one hour. Remove the aluminium foil and bake until golden brown. Serves 6-8.
