Spicy chicken and potato hotpot

    chicken thigh cutlets
  • 2
    medium onions, chopped
  • 2
    red chillies, chopped
  • 5

    ground cinnamon

    cumin seeds
  • 5
    ml
    turmeric
  • 5
    ml
    ground coriander
  • 15
    ml
    grated fresh ginger
  • 2
    cloves garlic, crushed
  • 2
    large potatoes, peeled and quartered
  • 125
    ml
    water
  • 3
    medium tomatoes, peeled, seeded and chopped
  • 15
    ml
    fresh coriander leaves
 

Method

 
Heat oil in pan, add chicken in batches and cook until well browned all over. Remove chicken from pan; drain on absorbent paper. Drain all but one tablespoon of juices from pan; add onions, chillies, cinnamon, cumin, turmeric, coriander, ginger and garlic to pan. Cook, stirring, until onions are soft. Return chicken to pan. add potatoes, water and tomatoes. Simmer, covered, for about 15 minutes or until chicken and potatoes are tender. Sprinkle with fresh coriander and serve on rice.
