Spicy beef salad

    tenderised steak
  • 15
    ml
    sunflower oil
  • 500
    g
    Thai or ribbon noodles, cooked
  • 100
    g
    nectarines or peaches, peeled, stoned and sliced
  • 130
    g
    cucumber
  • 1
    small onion, sliced
  • 30
    ml
    coriander
  • DRESSING
  • 5
    ml
    sliced chillies
  • 15
    ml
    each
  • lemon juice and fish sauce
  • 10
    ml
    brown sugar
 

Method

 
Fry steak quickly on each side to seal in juices. Cool slightly and slice thinly. Toss with noodles, nectarines, cucumber (cut into lengthways ribbons with a potato peeler) and coriander. DRESSING: Mix all ingredients together well and pour over steak, fruit and noodle mixture.
