Spicy Prawns

    onion, sliced into rings

    ground fennel

    whole cinnamon

    whole black peppercorns

    uncooked prawns
  • 4
    large, ripe tomatoes, skinned and finely chopped

    white-wine vinegar

    soft brown sugar

    fresh coriander leaves (optional)
  • Oil for frying
  • 1
    red chilli, seeded and finely chopped
  • 3
    cloves
    garlic, crushed
  • 1
    piece
    whole ginger, crushed
 

Method

 
Heat a little oil in a large frying pan and fry the chilli, garlic, ginger and saute onion until soft. Add the cumin, fennel, cloves, cinnamon and peppercorns and stir-fry for one minute. Add the prawns and stir-fry lightly. Reduce the heat and add the remaining ingredients. Simmer for a few minutes until the prawns are done and the sauce is nicely flavoured. Remove the piece of ginger before serving. Serves 4-6
