Spiced prawns

    whole prawns
  • 5
    ml
    ground cumin
  • 5
    ml
    cayenne pepper
  • 5
    ml
    turmeric
  • 3
    cloves garlic, crushed
  • 3
    green peppers, chopped
  • 50
    ml
    lemon juice
  • 50
    ml
    sunflower oil
  • 30
    ml
    fresh coriander, chopped
 

Method

45 minutes
 
1 Peel and clean prawns and set aside the shells. 2 Combine spices, garlic, peppers and 20 ml lemon juice in a processor and blend until smooth. Season with salt and pepper, add prawns and set aside to marinate for 1 hour. 3 Place prawns shells in a saucepan with 400 ml water and bring to the boil. Reduce heat, cover and simmer for 20 minutes. Strain the stock and reserve. Discard the shells. 4 Heat oil in a large frying pan and add marinated mixture. Simmer for 3 to 5 minutes until prawns are pink and cooked through. 5 Add 250 ml strained stock and bring to the boil. Reduce heat and simmer for a further 20 minutes, stirring occasionally. 6 Add remaining lemon juice and coriander. Serve hot with basmati rice. Serves: 4 Preparation time: 25 minutes, plus marinating time Cooking time: 45 minutes
