Ingredients (9)

1.00 kg prawns
5.00 ml cumin — ground
5.00 ml cayenne pepper
5.00 ml turmeric
3.00 garlic — cloves, crushed
3.00 green pepper — deseeded and chopped
50.00 ml lemon juice
50.00 ml sunflower oil
30.00 ml fresh coriander — chopped

Method:

1 Peel and clean prawns and set aside the shells.
2 Combine spices, garlic, peppers and 20 ml lemon juice in a processor and blend until smooth. Season with salt and pepper, add prawns and set aside to marinate for 1 hour.
3 Place prawns shells in a saucepan with 400 ml water and bring to the boil. Reduce heat, cover and simmer for 20 minutes. Strain the stock and reserve. Discard the shells.
4 Heat oil in a large frying pan and add marinated mixture. Simmer for 3 to 5 minutes until prawns are pink and cooked through.
5 Add 250 ml strained stock and bring to the boil. Reduce heat and simmer for a further 20 minutes, stirring occasionally.
6 Add remaining lemon juice and coriander. Serve hot with basmati rice.
