Spiced butter bean purée

  • 820
    g
    butter beans
  • 3
    cloves garlic
  • 5
    ml
    ground cumin
  • 1
    ground coriander
  • 1
    lemon, juice
  • 30
    ml
    yoghurt
  • salt and milled pepper
  • 125
    ml
    olive oil
 

Method

 
Place all the ingredients, except oil, in a food processor.
Process until well mixed.
Don't panic if you don't have a processor, use a potato masher and a fork and you'll achieve the same thing - well, sort of.
Add the coriander and with the motor still running, slowly add the oil in a thin stream until well combined.
Adjust seasoning and serve as desired.
To serve with lamb chops, slowly heat the purée then swirl onto heated plates and top with lamb cutlets.
