Spaghetti bake

    uncooked spaghetti

    bacon, finely chopped
  • 2
    onions, sliced into rings
  • 2
    tomatoes, skinned and diced
  • 4
    extra-large eggs
  • 500
    ml
    milk
  • salt and freshly ground black pepper
  • 2
    ml
    mustard powder
  • 2
    ml
    pinch of herbs
  • 30
    ml
    finely chopped parsley
  • 2
    extra tomatoes, sliced
  • grated Cheddar cheese for sprinkling
 

Method

Preheat the oven to 180ºC (350ºF). Spray a large ovenproof dish with non-stick spray or grease with margarine. Cook the spaghetti in rapidly boiling salted water until tender. Drain well and turn into the prepared oven dish. Fry the bacon until brown and sprinkle over the spaghetti. Sauté the onion in the pan fat until glossy. Add the tomatoes and simmer until a fairly thick sauce has formed. Pour over the spaghetti. Beat together the remaining ingredients, except the tomato slices and Cheddar cheese, and pour over the spaghetti. Arrange the tomato slices on top, sprinkle with cheese and bake for 30 minutes or until the mixture has set. Serves 6.
