    marinade olive oil

    white wine

    chopped fresh parsley

    dried sage OR 15 ml chopped fresh sage

    salt
  • 1
    ml
    freshly ground black pepper

    souvlaki white fish, skinned, deboned and cut into
  • 2.50
    cm
    cubes
  • 12
    prawns (optional)
  • 15
    cherry tomatoes
  • 1
    bunch
    large fresh sage leaves
  • 8
    to serve pittas
  • 250
    ml
    tzatziki (yoghurt and cucumber dip)
 

Method

Marinade Blend the ingredients in a glass bowl.

Souvlaki Add the fish cubes to the marinade and leave in the fridge for 2 hours.
Drain the fish and thread onto 8 satay skewers, alternating with the prawns, tomatoes and sage leaves.
Braai over medium coals until the fish is done.

To serve Unthread the skewer ingredients into pittas and spoon a little tzatziki on top.
Serve immediately.
