Sophie's beetroot salad

    beetroot
  • 1
    apple, grated
  • 1
    onion, grated
  • DRESSING
  • 125
    ml
    cornflour
  • 1
    Litres
    cold water
  • 250
    ml
    vinegar
  • 125
    ml
    sugar
 

Method

 
Cook beetroot, peel and cut into cubes. Mix beetroot, apple and onion together in a large bowl. Prepare dressing by mixing together cornflour with a little water to form a paste. Bring remaining water to the boil, add cornflour paste and cook gently until thick. Remove from the heat and add vinegar and sugar. Stir until sugar is dissolved. Pour over salad and toss gently.
