    kg
    whole steenbras, kabeljou, or Cape salmon
  • STUFFING
  • 2
    ripe red tomatoes, diced
  • 1
    onion, finely chopped
  • 15
    ml
    crushed fresh garlic
  • 15
    ml
    crushed fresh ginger
  • 5
    ml
    thyme
  • 10
    ml
    salt
  • 85
    ml
    sunflower oil
 

Method

 
Blend all stuffing ingredients. Taste and add a little extra seasoning if necessary. Cut 6 to 8 narrow slashes, each about 2 cm deep, down length of fish. Press tomato mixture into slashes. Place fish in a well-oiled roasting pan and bake at 180 ºC for 15 to 17 minutes for every 500 g fish. Baste with pan juices from time to time.
